Andrea defines his cuisine as deeply rooted in the Tuscan tradition, but with contemporary innovations and influences from his former experiences.
As if this were not enough, the restaurant produces its own olive oil and maintains its own garden where they grow many of the products they use in the restaurant like salvia and rosemary. Also they bake their own bread and most of the pasta, cheese and meats are from local farmers of the Tuscan region. For example, the restaurant is now closed for winter and Andrea is busy doing a gastronomic tour in 5 different Florentine restaurants or preparing four-handed secret dinners for Tuscany People magazine. One of his dreams for the future is to continue experimenting new uses of olive oil and to be an authority in this field.
